I made my own version of this recipe by using my favorite seasonings instead of ground cumin and I cooked it in a regular skillet. The results…perfectly cooked tasty chicken. The secret–rub in the seasonings; don’t just sprinkle them on the chicken. 
I also pounded the chicken breasts a bit to decrease the amount of time they had to cook.

4 skinless boneless chicken breast halves (5 to 6 ounces each) pounded to 1/2-inch thickness

A Healthy Twist on French Fries

On his show, Easy Entertaining with Michael Chiarello, chef Chiarello made Baked Pommes Frites. This is the European version of french fries. 
Ingredients

6 russet potatoes
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper

Directions
Preheat the oven to 450 degrees F.
Peel potatoes and cut lengthwise into quarter-inch thick slices. Cut again into 1/4-inch thick fries. Place the potatoes into a bowl with cold water; this will help keep the fries crisp. Just before cooking, drain water and place on paper towel, pat dry.
