1/4 tsp each salt and pepper

1 tbsp vegetable oil
1 small onion, diced
1 small zucchini (about 4 oz), cubed
1/2 tsp dried oregano
1/2 cup roasted red pepper strips
1 cup crumbled feta cheese

1 tbsp each rice vinegar and hoisin sauce
2 tsp cornstarch
1 pkg extra-firm_tofu
2 tbsp vegetable oil

2 carrots, thinly sliced on diagonal
1-1/2 cups sliced stemmed shiitake mushroom caps

I made my own version of this recipe by using my favorite seasonings instead of ground cumin and I cooked it in a regular skillet. The results…perfectly cooked tasty chicken. The secret–rub in the seasonings; don’t just sprinkle them on the chicken.
I also pounded the chicken breasts a bit to decrease the amount of time they had to cook.
